Seeded Granola

This hearty morning starter comes from chef Brittany Pankey of Taylor River Lodge, in Taylor Canyon Colorado. Serve it with one of the Lodge's golden lattes for a hearty, welcoming breakfast.

Ingredients
- 2 1/2 c.
old-fashioned rolled oats
- 1/2 c.
shaved coconut
- 1/3 c.
shredded coconut
- 1/3 c.
chopped walnuts
- 1/4 c.
slivered almonds
- 1/4 c.
pepitas
- 1/4 c.
sunflower seeds
- 1/4 c.
whole flax seeds
- 3 tbsp.
brown sugar
- 1 tsp.
ground cinnamon
- 1 tsp.
kosher salt
- 1 tbsp.
pure honey
- 1 tbsp.
canola oil
- 1/4 c.
raisins
- 1/3 c.
dried cherries
Vanilla Greek yogurt and fresh berries, for serving
Directions
- Step 1Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper. Combine first 11 ingredients in a bowl. 2. Heat honey and oil in a small saucepan over medium heat. Cook, stirring often, until smooth, 1 to 2 minutes. Stir into oat mixture. Spread on prepared baking sheet. Bake, stirring occasionally, until golden brown, 30 to 40 minutes. Cool completely. Stir in raisins and cherries. Serve over yogurt with fresh berries.
