For some, cabbage is a lucky New Year's food. Others only eat it in March as part of their St. Patrick's Day feast. But we think the smartest among us make cabbage a regular part of their everyday diet. Not only is the crunchy, mild veggie high in vitamin C, and a good source of fiber, but it's also a versatile friend in the kitchen — an easy way to fill out a plate, or add body and texture to dishes.

It's a cinch to prepare—you can eat it raw or cooked. And unlike some other veggies we could name, it'll happily wait in the fridge for days and days until you're ready to use it.
