Case in point: this tomato grilled cheese. What makes it so special? Thank you for asking!
First, ingredients: You'll want to use the ripest, sweetest, most flavorful heirloom tomatoes you can get. This is a summer sandwich. Next, soft brioche-style bread is important. It's the best thing for grilled cheese. And you don't want just any old cheese. Save the Cheddar for burgers and instead use Fontina. It's a mild white cheese that melts incredibly well.
Next: technique. You might be tempted to use butter when frying the bread. This is wrong. Mayonnaise is what you want. Don't love the flavor of mayonnaise? You won't taste it. It's true!
The mayonnaise will cover every inch of the bread, creating the perfect crispy, toasted exterior, but without any mayo flavor. The extra butter in the pan adds a little more flavor and keeps the bread from sticking.
End result: A grilled cheese for the ages, with lots of tomato flavor, and plenty of ooey gooey cheesiness.

Ingredients

slices brioche-style white bread
- 4 tbsp.
mayonnaise
- 8 oz.
Fontina cheese, sliced
- 2
large tomatoes, cut into 8 slices
Kosher salt and freshly ground black pepper
- 2 tbsp.
unsalted butter
Directions
- Step 1Lay bread on a work surface and spread 1/2 tablespoon mayonnaise on each. Turn 4 slices over and top with fontina and tomato, dividing evenly. Season with salt and pepper. Top with remaining bread slices, mayonnaise sides up.
- Step 2Melt 1 tablespoon butter in a large skillet or cast-iron pan over medium heat. Cook sandwiches, in two batches (adding an additional tablespoon of butter for second batch), turning once, until cheese is melted and bread is golden brown, 4 to 6 minutes. Serve immediately.
