Sure, kale gets all kinds of attention in the healthy eating world, but there's another green out there that's arguably every bit as healthy, that tastes great, and is super versatile. And the best part is that you can keep packages of it right in the freezer so there's no worry about using it all up before it goes bad. It's a superfood your grandma probably knew about and used regularly, though she probably just called it "food." It's spinach.

Frozen spinach is high in vitamin A and has significant amounts of vitamin C, B6, and magnesium. But more importantly, it can be used in any recipe where you're cooking spinach (it's not great in your summer salad recipes or where the spinach should be raw). To substitute frozen spinach for fresh, just use one 10 oz package, thawed and drained, for every cup of fresh spinach needed.

Frozen spinach is a great last-minute addition to all kinds of soups and stews, and it's wonderful tossed into a stir-fry, scrambled up in egg recipes, or made into a creamy dip.
