Haricots Verts (Green Beans) with Almonds and Vermouth

Ingredients
Kosher salt and freshly ground black pepper
- 1 1/2 lb.
haricots verts, trimmed
- 6 tbsp.
(3/4 stick) unsalted butter
- 1
shallot, minced
- 1/3 c.
slivered almonds
- 1/3 c.
dry vermouth
Directions
- Step 1Bring a large pot of salted water to a boil. Add beans and cook until crisp-tender, 2 to 4 minutes. Drain and rinse under cold water.
- Step 2Melt butter in a large skillet over medium heat. Cook, stirring occasionally, until golden brown, 1 to 3 minutes. Add shallot and cook, stirring, 1 minute. Add almonds and cook, stirring, until golden brown and fragrant, 3 to 4 minutes. Stir in haricots verts and vermouth. Cook until haricots verts are warm and liquid is slightly reduced, 1 to 2 minutes. Season with salt and pepper.
